Special chars encoding issue in portal Nginx access logs

Summary
In Nginx portal access logs special chars in user's firstname or lastname seems to have an encoding issue.
Setting charset utf-8;
in nginx.conf http section does not change this behavior.
I'm using lm_app log format :
log_format lm_app '$remote_addr - $upstream_http_lm_remote_user [$time_local] '
'"$request" $status $body_bytes_sent '
'"$http_referer" "$http_user_agent"';
In consequence our logs parser is not able to handle those lines
